* feat: centralize provider selection state in agentStore

Move provider discovery and selection from per-component state to a
shared store, ensuring the selected provider persists across screens
and is loaded once on app startup. Adds loading state for the provider
dropdown and removes hardcoded provider labels in favor of API data.

* fix: restore default provider after persona override
