refactor(goose2): deduplicate backend_paths in justfile

Extract the duplicated BACKEND_PATHS shell variable from the `setup`
and `check-binary` recipes into a single top-level `just` variable
`backend_paths`, referenced via {{ backend_paths }} interpolation.

feat(goose2): filter staleness check to backend-relevant paths only

Use `git diff --name-only` filtered to crates/, Cargo.toml, Cargo.lock,
and vendor/ so that UI-only commits don't force an unnecessary rebuild.
The dirty-state check is similarly scoped to backend paths. Falls back
to a hard error if the build SHA is unreachable (e.g. after rebase).

fix(goose2): correct sdk path in setup recipe
...
After `cd ../` puts us in `ui/`, the sdk directory is at `ui/sdk/` not
`../sdk/`. Change `cd ../sdk` to `cd sdk`.

feat(goose2): detect stale goose binary via git SHA stamp file

`just setup` now writes a `.goose-build-sha` stamp file after building
the goose binary. `just dev` and `just dev-debug` call the new
`check-binary` recipe which compares the stamp against the current HEAD:
mismatched base SHAs fail hard, dirty-flag mismatches warn and continue.
